Uwielbiam wszystkie zupy z stylu tajskim. Dlatego dzisiaj kolejna propozycja szybkiej i bardzo smacznej zupki. Tym razem z tofu, krewetkami i szpinakiem, w towarzystwie makaronu ryżowego. Przyprawy, takie jak imbir, chili i pieprz z pewnością pozwolą rozgrzać organizm podczas okresu mrozów. Zapraszam do przepisu!

- 180 g - tofu naturalne (niemodyfikowane genetycznie)
- 35 ml - sos rybny *
- 200 g - makaron ryżowy
- 2 łyżeczki - olej kokosowy
- 1 pęczek - cebulka ze szczypiorkiem (dymka)
- 3 plasterki - imbir świeży
- 1 ząbek - czosnek
- kilka plasterków - papryczka chili
- ok. 5 cm - por
- 2 sztuki - marchewka
- 1/4 malej - papryka czerwona
- ok. 1 i 1/2 l - bulion
- ilość wg uznania - sól himalajska
- ilość wg uznania - pieprz czarny
- 1 suszony liść - limonka kafir
- ok. 250 g - krewetka mrożona (np. indyjska Kidi)
- 100 g - szpinak baby
Składniki

Sposób przygotowania
- Tofu pokrój w kostkę , dodaj 10 ml sosu rybnego (resztę sosu zostaw do zupy). Wymieszaj i pozostaw na kilka minut.
- Ugotuj makaron ryżowy zgodnie z instrukcją na opakowaniu (zwykle gotuje się ok. 5 minut).
- W garnku rozgrzej 1 łyżeczkę oleju kokosowego. Cebulkę pokrój w kostkę (szczypior zostaw na później) i wrzuć do garnka. Dodaj plasterki imbiru, rozgnieciony czosnek, papryczkę chili, pokrojony w cienkie paski por oraz pokrojoną marchewkę i paprykę czerwoną. Podsmaż kilka minut. Następnie dodaj bulion i resztę sosu rybnego. Dopraw solą i pieprzem. Dodaj listek limonki kafir. Gotuj ok. 5-8 minut (warzywa mają być 'al dente'). Następnie dodaj krewetki i pogotuj kilka minut.
- W międzyczasie rozgrzej na patelni resztę oleju kokosowego. Wrzuć zamarynowane kostki tofu i smaż na średnim ogniu ok. 10 minut, do zarumienienia. Następnie zestaw z palnika.
- Szczypiorek pokrój drobno a szpinak baby pokrój w szerokie paski. Dodaj do zupy i gotuj tylko 1 minutę.
- Na dnie miseczki ułóż makaron, następnie wlej zupę i dodaj podsmażone kostki tofu. Gotowe!
