Topinamburowy krem z orzechami
Topinambur zwany jest inaczej słonecznikiem bulwiastym, karczochem jerozolimskim albo ziemną gruszką. To bardzo zdrowe warzywo, które w naszym kraju jest niemal zapomniane a kiedyś bardzo cenione. W Polsce topinambur uprawiany był od 1730 roku! Niestety, mimo bardzo dużej popularności, w tym samym stuleciu został wyparty przez ziemniaka, który okazał się łatwiejszy w przechowywaniu. Teraz topinambur powraca i robi prawdziwą furorę.
Bulwy topinamburu to bogactwo witamin: C, A, E, K, z grupy B( B6, B1, B2, B3, B9) oraz minerałów: wapń, żelazo, magnez, fosfor, potas, sód. Główną zaletą warzywa jest duża zawartość inuliny, która pozytywnie wpływa na rozwój dobroczynnej flory bakteryjnej jelit. Z tego względu topinambur pełni rolę prebiotyku. Już jedna bulwa zawiera terapeutyczną dawkę. Korzystny wpływ inuliny na zdrowie może odczuć każdy, a szczególnie osoby otyłe, odchudzające się i chorujące na cukrzycę. Systematycznie spożywany topinambur przyczynia się również do obniżenia poziomu cholesterolu LDL we krwi oraz poprawy wyników krwi. Poza tym ma bardzo niski indeks glikemiczny – tylko 14.
Słonecznik bulwiasty w smaku jest delikatnie słodkawy, lekko orzechowy, nieco przypomina karczocha. Można go spożywać na surowo, blanszowanego, pieczonego, smażonego lub gotowanego. Świetnie nadaje się na zdrowe chipsy, frytki, zupy, zapiekanki, pierogi, soki a nawet do kiszenia. Generalnie wszystkie dania, w których wykorzystujemy ziemniaki, można przygotować z topinamburu. Jest to szczególnie ważna wiadomość dla diabetyków.
A ja mam dla Was genialną zupę krem z topinamburu, z orzechami nerkowca i kurczakiem. W wersji wegetariańskiej kurczaka możecie zastąpić wędzonym łososiem. W dodatku na przygotowanie tego obiadu potrzebujesz tylko 30 minut. Spróbujesz? Jeśli tak, to podziel się spostrzeżeniami w komentarzach!

- 500 g - topinambur
- kilka kropel - sok z cytryny
- 1 duża - cebula
- 3 ząbki - czosnek
- 30 g - orzech nerkowca
- 150 g - pierś z kurczaka (lub kilka pasków wędzonego łososia)
- 3 łyżeczki - olej ryżowy
- 600 ml - woda (lub bulion)
- 1/2 łyżeczki - rozmaryn
- ilość wg uznania sól himalajska
- ilość wg uznania pieprz czarny
- 1/2 łyżeczki - papryka słodka
- 1/5 łyżeczki - pieprz cayenne
- kilka gałązek - natka pietruszki (lub świeży rozmaryn, tymianek)
Składniki
|
- Szklaną lub plastikową miskę (nie używaj metalowej*) napełnij zimną wodą, dodaj kilka kropel cytryny. Topinambur umyj i obierz, pokrój w plasterki. Wrzuć do miski z wodą na ok. 5 minut (ma to zapobiec ciemnieniu bulw). Cebulę oraz czosnek obierz i posiekaj w kosteczkę. Orzechy nerkowca krótko rozdrobnij w malakserze lub posiekaj nożem. Pierś z kurczaka opłucz, osusz papierowym ręcznikiem i pokrój w paski.
- Na patelni rozgrzej 2 łyżeczki oleju, wrzuć cebulę i zeszklij. Następnie dorzuć czosnek, rozdrobnione orzechy nerkowca i pół łyżeczki rozmarynu (rozetrzyj go w dłoniach). Podsmaż. Potem dorzuć odsączone plasterki topinamburu i duś ok. 5 minut.
- Zawartość patelni przełóż do garnka i zalej wrzącą wodą lub bulionem. Gotuj aż topinambur będzie miękki (ok. 5-10 minut). Zupę dopraw solą i pieprzem. Następnie lekko ostudź.
- Na patelni rozgrzej 1 łyżeczkę oleju. Wrzuć paski kurczaka, przypraw solą, pieprzem czarnym i smaż ok. 10 minut. Pod sam koniec dopraw papryką słodką i pieprzem cayenne.
- Zupę zmiksuj blenderem na gładki krem. Podawaj z usmażonymi paskami kurczaka lub z paskami wędzonego łososia. Udekoruj zielenią.
* Metalowe naczynia będą powodować utlenianie i sprawią, że bulwy nabiorą nieprzyjemnego ciemnego koloru.
