Sajgonki – inaczej krokiety albo naleśniki wiosenne to jedne z najpopularniejszych dań w kuchni chińskiej oraz kuchni krajów Azji Południowo-Wschodniej. Składają się z zawiniętego w papier ryżowy farszu. Oryginalne sajgonki przygotowywane są z surowego mięsa i warzyw a następnie smażone na głębokim oleju. Ale sajgonki niekoniecznie muszą obciekać olejem – można je również przyrządzić z podsmażonego wcześniej farszu i po zawinięciu w papier smażyć krótko, na znacznie mniejszej ilości tłuszczu. I ten sposób wybrałam. Znakomite jako przekąska, na imprezy, przyjęcia.

- 35 gram - makaron chiński
- 1 sztuka - marchewka (mała)
- 1/2 łyżeczki - imbir świeży

- 1 liść - kapusta pekińska
- 200 gram - mięso mielone wieprzowe
- 1 łyżka - sos sojowy
- 1/2 łyżki - natka pietruszki i szczypiorku (posiekane)
- 8 sztuk - kiełki fasoli mung
- 1 sztuka - jajko
- pieprz czarny
- sól

- 12 sztuk - papier ryżowy
- olej ryżowy
- sos sojowy lub sos słodko-kwaśny ("do maczania")

Sposób przygotowania
- Grzyby Mun namoczyć w gorącej wodzie. Po 15 minutach odcedzić, opłukać, zalać świeżą wodą i gotować ok. 10 minut. Ponownie odcedzić, odkroić nóżki a kapelusze pokroić drobno w paski.
- Makaron chiński wrzucić do wrzątku i zostawić pod przykryciem do napęcznienia. Następnie odcedzić i drobno pokroić.
- Marchewkę i imbir zetrzeć na tarce. Cebulę, czosnek, pora i kapustę pokroić drobno. Na patelni rozgrzać odrobinę oleju i wrzucić pokrojone warzywa. Po kilku minutach dodać mięso mielone i sos sojowy. Smażyć kilka minut, cały czas mieszając. Przełożyć do miski, dodać makaron, grzyby Mun i pozostawić do ostygnięcia. Potem dodać natkę pietruszki, szczypiorek, pokrojone kiełki fasoli mung i wbić jajko. Całość przyprawić solą i pieprzem.
- Pojedynczy placek papieru ryżowego zanurzyć na 2 sekundy w ciepłej wodzie i położyć na deskę aż zmięknie. Na placek położyć 1 łyżkę stołową nadzienia.
- Przykryć nadzienie bokiem placka.
- Zagiąć boki placka ryżowego.
- Zwinąć sajgonkę w rulonik.
- Na patelni rozgrzać olej (wystarczy warstwa 2-3 mm) i smażyć partiami aż do zezłocenia. Sajgonki odsączyć z tłuszczu na kuchennym papierowym ręczniku. Podawać na ciepło bądź na zimno z sosem sojowym albo słodko-kwaśnym.
