W mięsie kaczym znajduje się sporo białka oraz witamin z grupy B, witamina A, a także potas, fosfor, żelazo i magnez.
Muszę się przyznać, że uwielbiam kaczkę przyrządzoną na rożne sposoby a taki rosół smakuje mi nawet bardziej niż z kurczaka. Najczęściej jednak decyduję się na zakup piersi z kaczki, ponieważ jest ona najchudszą częścią (100 g bez skóry to 140 kcal, a ze skórą 202 kcal; natomiast 100 g tuszki z kaczki to 240 kcal).

- Mięso wymyj, wrzuć do garnka i zalej wodą. Dodaj listki laurowe, ziele angielskie i łyżeczkę soli. Gotuj 30 minut (bez przykrywki), w międzyczasie zdejmuj łyżką zbierającą się na powierzchni pianę.
- Warzywa umyj. Marchewkę, pietruszkę i seler obierz. Cebulę obierz, przekrój na pół i krótko podsmaż na patelni (bez tłuszczu). Warzywa przełóż do garnka z kaczką, dodaj pora, kawałek obranego imbiru, oraz gałązki natki pietruszki (w całości). Koniecznie przykryj. Gotuj na małym ogniu ok. 1h i 45 minut. Dopraw solą i pieprzem. Podawaj z makaronem jajecznym.
Jeżeli chcesz "odchudzić" rosół z kaczki, to poczekaj aż wystygnie, a następnie wstaw do lodówki. Po kilku godzinach z łatwością można zebrać łyżką tłuszcz z powierzchni.
