- 220 ml - mleko
- 50 ml olej słonecznikowy
- 2 sztuki - jajko
- 120 g - ser cheddar + 20 g startego na wierzch

Sposób przygotowania
- Cebulę, paprykę i pieczarki pokrój w drobną kostkę. Na patelni rozgrzej 1 łyżkę oleju i wrzuć warzywa. Podsmaż kilka minut aż zrobią się miękkie. Odparuj ewentualną wodę z pieczarek. Odstaw i ostudź.
- Do miski przesiej wszystkie suche składniki: mąkę, proszek i przyprawy.
- W drugiej misce wymieszaj mleko, olej i jajka. Dodaj pokrojony w drobną kostkę ser cheddar, dokładnie odsączone i posiekane oliwki zielone oraz ostudzone warzywa z patelni. Wymieszaj łyżką/ widelcem, tylko do połączenia składników. Nie używaj miksera.
- Piekarnik rozgrzej do temperatury 180 st. C. Foremkę na muffinki wyłóż papilotkami i koniecznie wysmaruj je od środka odrobiną oleju. Napełnij je ciastem. Pozostały ser zetrzyj na tarce i posyp nim wierzch muffinek.
- Piecz ok. 25 minut. Wyjmij i ostudź. Gotowe! Przechowuj w szczelnym pojemniku.
